Possibly an overlooked part of your kitchen gadget collection could well be the cream chargers and dispenser – see creamchargers.org.uk for the full range – on the surface your probably thinking that all they are god for is whipping cream

but that would be to significantly ignore the potential of what they can achieve. The equipment is simple, a cream charger is a small pressurised canister of Nitrous Oxide Gas and the dispenser is a method of combining it under pressure with a liquid. The key to this is the fact that it could be any liquid – not just whipped cream that is produced.

You might think that the same could be said for soda syphons and streams that do pretty much the same thing but with CO2 gas – but the significant difference is that CO2 will impart an acidic flavour upon the liquid – this is great if you want something tangy, like Coca-Cola – but not quite so great of what you are trying to produce is a subtly flavoured whipped cream.

Perhaps to get started you might want to stick to using the equipment for  making the simple whipped cream but just dress it up a little with some flavouring. Most shops – including the Cheeky Monkey shop we’ve linked to will have s election of flavouring syrups that simply mix with the cream before pressurizing and dispensing. That is perhaps a cheats approach – so in keeping with the DIY nature of this website we’d like to think that you can be a bit experimental and try a few flavours of your own.

Sweet Flavouring for Whipped Cream

  • Strawberry – just use some smooth jam
  • coffee – use very strong espresso and a bit of icing sugar
  • vanilla essence – just a few drops
  • chocolate – simple dissolve some cocoa powder
  • caramel
  • maple syrup

Savoury flavours

  • horseradish
  • tomato puree
  • chilli
  • basil
  • mustard powder

 

The nitrous oxide in the chargers does not make any foams or whips you produce last very long – so any sort of thickening agent will add longevity to the product.
