•Heat heavy-based fry pan or grill to high. Smear a little oil over the meat before placing on the hot cooking surface.
•Season with salt and pepper during cooking.
•Cook cutlets until well sealed, and starting to char around edges (3-4 minutes) then turn and seal other side.
•Rest chops for about 2 min. before serving to allow the juices in the meat to return to the centre of the meat.
