Olive oil is made from the olive tree, which grows primarily in the Mediterranean. Cooking with olive oil is not only a delicious option, but also a healthy alternative to other oils. Olive oil has a high concentration of monounsaturated fats and anti-oxidative substances. It has been suggested that higher proportions of monounsaturated fats are linked to a reduced risk of coronary artery disease.
Not all olive oils are created equal. There are different types of olive oil. Extra virgin olive oil (EVOO) has low acidity and is thought to have the best taste. Virgin olive oil is slightly more acidic than extra virgin olive oil, but it still has a good taste. You will also see pure olive oil or simply olive oil. These two are a blend of olive oil and refined oil and are not as flavorful as the virgin oils. Olive oils that are made from refined oils are chemically controlled for taste and acidity.
There are many ways to use olive oil in your cooking. It can be drizzled on salads, used in marinades and dressings, used to saute in or even for deep frying. For cold foods, salad dressings, and sauteing, choose extra virgin olive oil. Refined oils are a better choice or deep frying since they hold up to the intense heat better.
